Native Roasters
With the intention of creating a platform for Native roasters that they would not otherwise have here in Portland, OR, Bison Coffeehouse is also supporting local economies and fostering growth in the Native community. Life on the reservation is hard, and each roaster takes deep pride in the roast they create, bringing the best roast they can to market because it's often their only source of income, and one that must sustain the entire family. This breeds a standard of excellence that is evident in each and every cup. Every safeguard is taken to insure that the money goes directly back to the roasters. Bison Coffeehouse is deeply committed to giving back to the Native community.
Quality & Curation
Every vendor's product is carefully evaluated for their standard of quality and commitment to excellence. Bison Coffeehouse works directly with many of its roasters in shaping the taste of the coffee and getting the roast just right. These are small farms that produce organic beans, and Native roasters don’t outsource their roasting.
Timely delivery is carefully intentional to insure freshness. Every detail is lovingly considered to ensure top-notch quality.
Sustainability
Bison Coffeehouse makes every effort to implement eco-friendly, sustainable products into the experience. In an effort to disengage from using plastic in every way, we're always looking for opportunities to integrate compostable, bio-degradable products. We are moving towards using glass for beverage bottles. We compost our coffee grounds to local neighbors. We are committed to sustainability and eco-stewardship.

Native Coffee Traders
Native Coffee Traders specialty coffee is made available to you through a network of native communities from the cooperative family farms in Mexico and Guatemala, El Salvador, Nicaragua, Costa Rica and Peru, to Nation Territories in North America. Our green beans are certified by the Organic Crop Improvement Association, which is the most respected international organic crop certification organization. From farm to gourmet coffee shop, Native Coffee Traders is prepared using traditional methods by the native people, which allow them to maintain their cultures and indigenous lifestyles.

Star Village Coffee
Star Village Coffee (SVC) is a Native American owned and family operated coffee company. We are Great Basin, desert dwelling, coffee obsessing, combination of Type A and Type B personalities through and through. We are loyal to our soil, and can’t wait to share our passion for Great Basin artistry with our fellow coffee heads. Star Village Coffee is a young startup company that’s poised to make lasting impacts on the local and national native food movements.
Our approach to making coffee combines old wisdom with new insight, to create roast profiles that surprise at every turn. We’d like to imagine that our coffee inspiration exists in a creative space of compromise, where the desert alpine converges with the high sierra, to symbolize a historical resilience that pays homage to that which came before.
At Star Village Coffee, careful attention will be paid to all stages of the product’s development. For us, ‘quality assurance’ means paying extra attention to overlooked details that can make the difference between coffee’s that are run-of-the-mill, or coffee’s that are fine-grained with distinction.

Spirit Mountain Coffee
Our purpose is to bring people from all walks of life together and provide them hope, using coffee as our common ground.
We focus on producing high quality coffee in an environmentally sustainable way while honoring the dignity of those who work for us. Our plantation is relatively small as coffee farms go. However, we have found that the farm has become a gathering place for people from the furthest reaches of the globe…all with a common interest in this simple agricultural product.
We are passionate about human souls and the role we play in the natural world. Each of us are in the midst of writing our life story; the more we can love and serve our neighbors, the brighter the world will be. Behind everything we do is the belief that we can make our world a better place.
We harvest our coffee when the fruit is fully ripe, one cherry at a time. We take great care in how we harvest and process our coffee. We dry all of our coffee in Raised African Bed – all so you can enjoy an even better cup of Spirit Mountain coffee.

What started as a desire to make the perfect Ginger Spiced Chai, both spicy and aromatic with a deep caramelized sweetness, became an obsession to create other beverages that embody the spirit of Portland’s rich culinary scene.
Today Tanglewood’s team of brewers make one of a kind beverages like the bourbon infused Hot Buttered Yam and the lightly floral Turmeric Thai Tea for home consumption and for cafes all over the country & beyond

Soma Kombucha

Lionheart Dry Kombucha
These days it’s hard to tell what you’re getting when you buy Kombucha. Will it be too sweet? Will it be terrible? Will it explode when I open it? Lion Heart is 100% traditionally brewed with our mother culture which was brought from Russia in the 1980’s and has never touched non-organic tea. We have always used quality wine-making equipment, and never stored our brewing Kombucha or SCOBYs in plastic. Our dedication to quality runs deep. Our commitment to the health of our community runs even deeper.
Water Kefir

Good Wolf Water Kefir
Water Kefir is a raw, light and living probiotic drink that helps you feed the good inside! We traditionally ferment our non-dairy kefir crystals and flavor with organic ingredients in small batches in Portland, Oregon. Our flavor profiles are well-curated, balanced and approachable for everyday drinking.
Baked Goods
From Bison Coffeehouse's small commercial kitchen, these recipes were crafted with care and passion by owner, Loretta Guzman. As a long time enthusiast of the art of baking, Loretta apprenticed under a master baker and eventually went on to become one herself. "I find the recipes online, and through a process of experimentation, refinement, and perfecting, I eventually get to a place where it's locked in."
In soliciting and listening to customers for input and suggestions, regulars have played a role in shaping Bison Coffeehouse's offerings. One of the most popular dishes, Bison's signature House Biscuits, which contain no sugar, was a happy accident based on a customer suggestion: Loretta explains "Green Chile Pepper jack bacon biscuits was actually supposed to be a quiche, based on a customer suggestion. I misunderstood him and thought he meant biscuits. Now it's one of our daily favorites. "
